【絲瓜蛋酥麵線】LoofahEggMeeSua【菜谱】

2018-11-20 - 春天种下的丝瓜在我左顾右盼几个月之后终于在夏末开花结果了,自己种的丝瓜非常鲜嫩好吃。有天跟我妈聊天时她说丝瓜煮面线最好吃了,刚好冰箱里还存着收成的最后两根丝瓜,就拿来做了丝瓜蛋酥面线,今年的丝瓜收成就算完美收官了~~AparentfrommysonA'sChineseschoolgavemeaseedlingofloofahinspring.IttooktheplantaverylongtimetobloomandIalmostthoughtthattherewillnotbeanyharvestthisyear.Theplantfinallybloomedandbearfruitssometimesendofsummer/beginningoffall.HomegrownloofahissotenderandtastyandImadesomanydifferentdisheswithit.OneofmyfavoritewaystocookloofahisthisMeeSuasoup,quick,simpleyetveryheartyinthiscoldweather,aperfectwaytousemylasttwoloofahoftheseason!材料:1-2根丝瓜(视大小而定)2把面线2只鸡蛋(加一点料酒和食盐打散)1大勺虾米/虾干1/4杯食油几滴麻油一点胡椒粉另2大勺红葱头油和葱酥Ingredients:1-2Loofah(dependingonthesizes)2bunchesofMeeSuah(Thinnoodles)2eggs(Beatenwithlittlesaltandabout1/8tspofChineseCookingwine)1tbspofdriedshrimps1/4cupofcookingoilApinchofpepperpowder2tbspoffriedshallotsandsomeshallotoilforgarnishing1.把丝瓜削皮切块备用。虾米泡热水五分钟取出沥干备用。2.把鸡蛋加点料酒和盐打散,锅里热上1/4杯食油,把鸡蛋液慢慢地滴到热油里炸酥后沥干油备用。我也顺便做了点红葱头油和红葱酥。1.Peelandcutloofahintopiecesaround1cminthickness.Soakdriedshrimpinhotwaterfor5minutes,drained.2.Heat1/4cupofcookingoilup,slowlydripbeateneggintohotoiltoformsmalldroplets.Frytheeggdropsuntilgoldenincolor,takeoutandremoveexcessoil.Ialsomadesomefriedshallotsforgarnishinglater.3.锅里热上一大勺食油把虾米爆香,加入丝瓜煸炒2-3分钟后加水煮滚,加盐调味再稍微煮至丝瓜变软即可。4.另取一只小锅煮滚半锅水把面线烫熟,面线很容易煮熟,煮的时间大约1-2分钟即可。捞出面线放到碗里,加上刚刚煮好的丝瓜汤,铺上蛋酥和一些葱头油和葱酥即可上桌。记得趁热吃哦!3.Heatatbspofoilinapot,adddriedshrimpsandfryuntilfragrant,addloofahandcookfor2-3minutes,addwaterandbringtoboil,seasonwithsaltandcookuntilloofahbecometender.4.BringasmallpotofwatertoboiltocookMeeSua,thisthinnoodlecooksveryfast,ittakesonlyabout1-2minutesinrollingboilwater,drainandplacethenoodleinabowlwiththeloofahsoupwejustmade.Addthefriedeggdrops,friedshallotwithsomeshallotoilandapinchofpepperpowder.Servehot.欢迎到我的英文博客玩--http://www.echoskitchen.com/2018/11/loofah-egg-mee-sua.html
